Welsh cakes

A Sunday afternoon at home meant time for baking.  Today Welsh cakes using my Welsh mother in laws recipe.  Here's the recipe for those who might be interested (sorry it is in imperial, I have had this recipe for over 35 years!!):-
12oz SR flour
2 teasp Baking Powder
6oz margarine
5oz sugar
4oz currants
3/4 teasp mixed spice
1 small egg
Approx 2 tab milk
Mix flour and baking powder together. Rub in margarine.  Add sugar, currants and spice.  Mix egg and milk and add to mixture to make a dough.  Roll out on a floured board 1/4" thick and cut out rounds with a cutter.  Cook on a plank/griddle until golden.  ( I use 8oz currants and 2 teaspoons mixed spice because I like them fruity and spicier)

Ah the nostalgia - I grew up on welsh cakes (seeing as my mother was welsh). I use her mother's griddle still.
